Shiitake: Applications & Regions

The shiitake (/ʃɪˈtɑːkeɪ, ˌʃiːɪ-, -ki/; Japanese: ⓘ Chinese mushroom, black mushroom, Lentinula edodes or sometimes Lentinus edodes) is an edible mushroom native to East Asia and mainland Southeast Asia, which is cultivated and consumed around the globe. The earliest written records of their cultivation dates to 1209, during the Song dynasty in China.
