Celulóza (chemický název celulosa) je polysacharid sestávající z beta-D-glukózy. Jednotlivé glukózové jednotky jsou spojené glykosidovou vazbou β-1,4 a tvoří dlouhé, nerozvětvené řetězce, které jsou zcela nerozpustné ve vodě.
